I only have the DX version of Link's Awakening....What exactly did the stone slabs in the original game do (that were replaced by the owl statues and stone beaks)?

No difference, besides it being a stone wall needing a stone slab...guess Link reads the information on the completed stone slab rather than hearing it from the owl statues...

What was the point of changing it if they have no functional difference?
